Wheat oligopeptide is a mixture of small-molecule polypeptides extracted from wheat protein and refined via targeted enzymatic hydrolysis. It is predominantly composed of 2 to 6 amino acids with a molecular weight of ≤1000 Da, featuring natural origin, high biological activity and high bioavailability. Using wheat gluten as the core raw material, the peptide is produced through a green enzymatic process. Manufacturing Information-

 

At present, the mainstream production method of wheat oligopeptide is enzymatic hydrolysis. Thanks to its advantages of high safety, easy process control, high efficiency and reasonable cost, enzymatic hydrolysis has become the dominant industrial preparation technology. Meanwhile, a small number of chemical synthesis and microbial fermentation methods are only applied in laboratory research or the production of special-specification products.

 

The core process of enzymatic synthesis consists of five key procedures: raw material pretreatment, enzymatic hydrolysis reaction, enzyme inactivation, separation and purification, and drying and forming.

 

Firstly, wheat gluten is pretreated and mixed with water at a mass ratio of 1:(5–20) to prepare slurry. Degreasing, crushing and other treatments are carried out simultaneously to improve the solubility of raw materials.

 

Subsequently, alkaline protease and neutral protease are added for two-step enzymatic hydrolysis. Per 100 g of wheat gluten, 1.90–2.90 AU of alkaline protease and 0.64–0.96 AU of neutral protease are added. The temperature and pH value are precisely controlled to ensure sufficient cleavage of peptide bonds.

 

After enzymatic hydrolysis, high-temperature enzyme inactivation is adopted to terminate the reaction and prevent excessive hydrolysis. Impurities and macromolecular peptide fragments are then removed via centrifugation, filtration (using 50–200 nm membrane filters), macroporous adsorption resin purification, cation exchange resin purification and anion exchange resin purification, so as to retain the target oligopeptides.

 

Finally, spray drying is performed with an inlet temperature of 160–180 ℃ and an outlet temperature of 60–80 ℃, yielding powdered finished the peptide. This process can effectively retain functional peptide fragments such as AQ, IQ and SQQ with glutamine supplementation activity, and significantly improve the overall product quality.

Contraindications
 

People with allergic constitution to wheat and cereal proteins are strictly prohibited from consumption. Intake by such susceptible groups may easily induce skin rashes, itching, respiratory discomfort and even gastrointestinal allergic reactions.

 

Infants and young children have immature gastrointestinal development; independent additional supplementation of the peptide is not recommended, so as to avoid increasing the digestive burden on their delicate gastrointestinal tract.
